Instead of the ordinary pumpkin pie, try a spiced up cake! My mother, Susan Welch, calls this delicious dessert Pumpkin Dump Cake, but I personally call it Pumpkin Spice Cake. Do not let its name fool you; this dessert will radically change the way you view pumpkin. This simple recipe is great to enjoy during the holiday season. Treat your family and friends to a dessert that will leave them begging for another piece. This easy recipe is fun to make, and the results will delight even the most skeptical.
Ingredients:
3 eggs, beaten
1 large can (29 oz.) of pumpkin
1 cup of sugar
1 tsp. of cinnamon
½ tsp. of ginger
½ tsp. of salt
½ tsp. of cloves
Directions:
Mix all the ingredients together. Pour the mixture into a greased 9” x 13” pan. Sprinkle one box of yellow cake mix over the pumpkin mixture. Melt one cube of margarine and drizzle it over the top. Cover the top with 1 cup or more of chopped nuts. Bake for 1 hour at 350°C. Serve the desert with whipped cream.
